This sake is Shichida's challenge to dispel the notion that higher numbers in rice polishing are always better. Although Shichida uses very little polish, he still manages to brew a high-quality sake that is full-bodied and engaging from start to finish. The nose is rich and sweet, with figs and dried fruit being the first aromas. Its finish is smooth and refreshing. Sweet and savoury pair perfectly together, so serve it with heavy, savoury dishes to balance it out.
